First of all: do you want to build a car with gps or the gps system alone? In the first case, sensors you need are: gps and compass (to know your position and orientation), distance-sensor( for example I used the Ultrasonic Distance Sensor - HC-SR04) and a servo; toghether they will help the car to avoid obstacles.
If you want just a normal gps, you need only a sensor and its library.
Teorecally you could, but there are quite enough sensors so you shouldn't include some of them(such as the gps and the compass) .Moreover you should reorganize inputs and outputs. If you need help, let me know
Regarding the APK with MIT App Inventor, you can modify mine,(download "Source for MIT App Inventor" above) and to control the rotic arm, there are other project on Arduino Hub; among these, I have built a robotic arm too, these are links to my two other project.
