I think what you described is totally feasible. Acquiring data from sensor is what Arduino is good at. However, this demo only works in a vehicle that has an OBD system built-in. What it does it only to get the data from the system, but not deal with the analog sensor itself. So if you want to get the data from different sensors, simply use Arduino without this PCB.

Arduino MEGA can give you more IOs.

There are various screens available for Arduino. You can even use Raspberry Pi for fancy display.

Arduino has microSD card shield that enables storing data in a SD card.
