Poseidon is a cheap wireless water level controller for overhead tanks made using Arduino UNO and HC-12 wireless communication module.
Most probably the latency may be due to the wireless modules. The Hc-12 module only transmits its signal once the input buffer is filled and that may cause the observed delay. You can try using different baud rates for the communication between the modules or try changing the default mode of the hc-12 through the AT commands. This may help reduce some latency.
Thanks a lot!! The HC-12 modules are not Bluetooth modules, they are wireless serial communication modules. The list of hardware components have been updated to show two HC-12 Modules.
Try using the arduino libraries for nRF24L01 module
