Have you installed the Adafruit_Sensor.h library? Looks like it can't find the file.
I was able to compile the code. I would make sure you are using the latest IDE. Looks like 1.8.5 is the latest for Windows. What errors do you see in the log when it tries to compile?
While I haven't thought a lot about using steppers (would be a great idea tho), the easiest would be to replace the servo.h with stepper.h and modify the code appropriately. You would also need some sort of motor driver that can handle the stepper motors you would be using.
I have some stepper motors I may look into modifying the project to utilize them.
