Control is via PID. PID is not magic and certainly not in thermal systems - especially in thermal systems with variable ambient temperature and thermal coupling and load. I've done my non-professional best, but under some conditions it still shoots over somewhat. I could fix that, but then it would be slower. That said, surely a professional control systems engineer could improve it.
This is very well done, great job. If you ever consider updating the front panel to a TFT display to something like this
give us a shout, i'm sure we could work something out ;)
